My Favourite Raw Vegan Healthy Snickers Pie

I am by no means vegan (I wouldn’t be able to go without my yoghurt or cheese for longer than a day) but I absolutely love experimenting with vegan desserts. Not only to fuel my sweet tooth but because I am often genuinely surprised and impressed at how delicious these creations turn out. I love the taste of vegan desserts but never claim that they actually taste like the real deal. A raw, vegan brownie can be delicious, for example, (and I have an amazing recipe by the way, which I will share soon) but for me, it will never replace the taste of a chewy, gooey, chocolatey real-deal brownie. 

This one, however, has blown me away.

Even though most of us probably don’t go out of your way to buy a Mars, Snickers, Twix, Bounty or Kit Kat, I bet we all have our favourite in amongst those original chocolate bars. Snickers was always mine. The mix of creamy caramel and chunky peanuts, wrapped in chocolate, say no more. When I stumbled across this recipe, I had to give it a go. And it is truly delicious. The outer crust is chocolatey and chewy, the peanut mousse is luscious and creamy but what I am most impressed by is the taste of that caramel layer in between. It is made out of raw cashews, dates and a hint of vanilla and it tastes like real caramel. Like really.

This treat is easy to make as long as you have a food processor. And my favourite part of all? Sharing a delicious slice with my gorgeous and excited toddler, without having to feel guilty – I mean it is raw, vegan, paleo, refinded-sugar free, and almost only made out of nuts and dates! This dessert will put much needed energy back in both of our tanks.
