Our Favourite Banana Bread Recipe

You bake because you want to bake, not because you have to. You bake to share and you bake to celebrate. These are reasons why I’ve always loved baking. Before Noah, I used it as my little therapy session in which I found my own peace and quiet – a time to think. With Noah in the mix (get it? – hah), he will generally want to join in, which I love. The kitchen may be more of a mess with two additional chubby hands as ‘helpers’ but it’s a lot more fun and memorable that way and I simply save my thinking time for the evening now.

Noah’s favourite part is handling the eggs. He’ll often try and run off with one in his hand, which I have yet to think of as a good idea. And although he loves the wooden spoon and whisk, I’m pretty sure he would much rather use his hand as mixers instead!

Those who know me well would have at one point or another tasted my deliciously moist, home-made banana bread. This is the only recipe I have been baking consistently for the past many years and I will continue to do so.

Baking has been a love of mine for many years and I hope to continue to make it part of our many family traditions in the future. I want to show Noah how special it is to spend time together in the kitchen as a family. In so many cultures, the kitchen and what comes from it is at the center and heart of family life. I absolutely love this and hope to cultivate it in my very own little family.  

Banana Bread Recipe

  • 2 eggs (beaten)
  • 1/3 cup buttermilk (80 ml)
  • ½ cup vegetable oil (120ml)
  • 1 cup mashed bananas (3-4 ripe)
  • 1 tsp vanilla extract
  • 1 cup white sugar (128gr)
  • ½ cup brown sugar (64gr)
  • 1 ¾ cup flour (224gr)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • Chocolate chips
  1. Preheat the oven to 330F (165C)
  2. Butter a bread pan. Once greased on all sides, sprinkle brown sugar on all sides. Set aside.
  3. Beat the eggs. Add the buttermilk, vegetable oil, vanilla extract. Mix all ingredients on a low speed until combined. Add the bananas and mix until combined.
  4. In a separate bowl, combine all dry ingredients.
  5. Add dry ingredients to the moist mixture and mix until just combine. Fold in chocolate chips. Do not overmix.
  6. Pour the batter into the pre-prepared pan. Sprinkle additional chocolate chips on the surface of the batter.
  7. Bake for 50min-1hr. Surface should be golden brown and the inside still slightly moist.
  8. Love it!
